Tasting comments on the Colors series of bottled japanese teas

The popular Japanese "RED" black tea, with its gorgeous black tea and Japanese character

SUMMARY

This is one of the most popular brands in the series. It has the gorgeous, deep color and flavor typical of black tea and the Japanese character of mandarin orange, biwa, and ginkgo leaves.

The use of clean, soft water drawn from near the tea plantation gives it a soft umami and smooth astringency, and the result is a truly "Japanese" black tea with a balance of gorgeous flavor and deep taste.

The variety of characters that spread with each sip has led to its adoption as a pairing tea in French restaurants.

TASTE

Amber to brown tones. Fruit aromas of mandarin orange, biwa, apricot, and other black tea but Japanese characters, with dried tomatoes, laurel (dried), licorice (dried), autumn ginkgo leaves, and mushroom accents.

In the mouth, the same flavors as in the aroma spread over the palate along with a good acidity.

The astringency is also well balanced, giving a calm impression that can be enjoyed slowly until the finish.

We used soft water from a spring near the tea plantation, and repeated trials were conducted to achieve the best balance between the individuality of the tea and the Japanese flavor and astringency.

The multi-layered flavor provides customers with a new Japanese tea experience, a "Japanese" black tea experience.

It is a drink with a diverse character and can be enjoyed in a very wide range of ways. It can be served with soups, stews, cured hams, charcuterie (at a temperature of 14 to 16 degrees Celsius), dishes with potatoes, sauces with tomatoes, fried dishes, dishes with cream, spicy dishes, deep flavors such as autumnal ingredients or slightly sweet miso, the flavor of mugwort, millet It can be combined with a variety of dishes, including those with the flavor of mugwort, millet, etc.

"BLUE", a classic and modern oolong tea that combines the charm of Japanese tea with the technology of Chinese tea

SUMMARY

This tea product combines the charm of Japanese tea with the technology of Chinese tea.

The fruity flavor of mango, apricot, and berries is combined with the aroma of white flowers and honey.

In the mouth, you will also enjoy the blue aroma of Japanese tea, seaweed-like flavor and astringency.

Enjoy a classic and modern tea experience where you can simultaneously experience the history of Chinese tea and the history of Japanese tea, which blossomed after the introduction of the chanoki tree from China.

TASTE

Clear amber color. It has fruity notes of mango, apricot, strawberry, white flowers, honey, persimmon leaf, and licorice.

On the palate, there is a green leaf aroma characteristic of Japanese tea leaves, a seaweed-like flavor, and a touch of astringency. There is also a touch of blueberry in the aftertaste.

The very multilayered aroma of this tea, like that of Chinese tea, is combined with the characteristics of Japanese tea leaves, and you will enjoy a cup with a character that is sensuously different from any other conventional tea.

It goes well with fruit sauces, spiced dishes, dishes with the flavor of miso or soy sauce, grilled dishes with a burnt aroma, and Japanese sweets made with fruit.

"GREEN", a concentrated and full-bodied green tea with maximum extraction of handmade and single-origin character

SUMMARY

This brand offers more "individuality" than previous green teas.

Blue aroma of fine tea leaves, floral, sweetness like rice cake, flavor like kelp soup stock, richness with a sense of concentration like brown sugar, and a long aftertaste.

From cultivation to processing of tea leaves, the tea is grown in a single tea plantation, completely pesticide-free. The tea leaves, which can only be produced by that particular person at that particular place, are extracted and bottled using the best technology and local water.

Enjoy a cup of tea that expresses the charm of handmade, traditional tea farm products and the unique character of the land, just like wine.

TASTE

Brilliant yellow-green color. Floral like camellia, sweet like Kamishinko, cherry leaves, green grass, plus accents of dokudami, straw, and laurel.

In the mouth, it has a gentle flavor of kombu dashi (kelp stock), sweetness like mochi (rice cake), and a long, lingering, rich flavor like brown sugar.

The concentrated aroma and flavor are fused with the freshness of green tea leaves.

The tea leaves used for "GREEN" are based on the concept of wilted sencha, which is naturally produced in the satoyama and in the traditional tea farmers' activities. From the planting of seedlings to the processing of tea leaves, everything is done in a single tea garden, and the tea is grown completely pesticide-free. Tea leaves grown at high altitude and the difference in temperature are stored in a cool and dark place after plucking and wilted.

In an era when efficient transportation and large machinery were not available, and tea leaves could not be made immediately after harvest, it was not uncommon for tea leaves to be spread out in a cool place and stored overnight. Therefore, it is assumed that the wilting was not done intentionally to enhance the aroma, but rather the individuality of the tea leaves and the degree of wilting varied depending on the production environment and conditions, resulting in the individuality of the producer and his/her cup of tea.

We focus on extracting and bottling the best of such "handmade" and "single origin" teas to provide a "unique" Japanese tea experience that is more than just shades of flavor.
